AHI TUNA (GF)

AHI TUNA | makes 2 tuna steaks |

INGREDIENTS

  • 2 ahi tuna steaks
  • 4 cloves garlic
  • 1 medium shallot
  • 2 tbsp red grape juice
  • 2 tbsp balsamic vinegar
  • 1 tbsp fish sauce
  • 1/2 tsp garam masala
  • 1/2 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tbsp whole grain mustard
  • 2 tbsp grapeseed oil
  • 3 scallions
  • 1 avocado
  • cilantro
  • 1 tbsp capers
  • himalayan salt

STEPS

sauce

  1. add olive oil to a sauce pan and add crushed whole garlic and chopped shallots in succession
  2. cook them until they turn brown
  3. add some red grape juice
  4. add some balsamic vinegar
  5. add a little bit of fish sauce
  6. let the sauce simmer and reduce it

tuna

  1. make a mixture of garam masala, cumin powder, coriander powder, whole grain mustard, himalayan salt, and lots of freshly ground black pepper
  2. rub the mixture onto both sides of of your tuna
  3. heat grapeseed oil until it smokes
  4. lay the tuna down and cook each side (this doesn’t take long, somewhere in the 40-50 second range per side)
  5. let it sit for a minute
  6. slice it so that everyone can see the amazing red color of your tuna
  7. spoon over some of your fabulous sauce
  8. top with a sliced avocado, cilantro, chopped scallions, and capers
