BAKED MACKEREL WITH TOMATO GRAPE SALSA (GF)

BAKED MACKEREL WITH TOMATO GRAPE SALSA | serves 2-3 |

INGREDIENTS

  • 0.5 cup white onion
  • 3 cups chopped parsely 
  • 2 tsp crushed red pepper
  • 2 tsp salt
  • 2 tsp black pepper
  • 10g aji amarillo pepper powder
  • 6 pod green cardamon
  • 2 tsp ground cloves
  • 50g belgian endives
  • 1 cup grape tomatoes
  • 0.5 cup green grapes
  • 0.5 cup red grapes
  • 1 tsp white vinegar
  • 4 cloves garlic
  • 1 tbsp unsalted butter
  • 1 lb fresh atlantic mackerel
  • 1 lemon

STEPS

  1. there are two parts to this recipe.  start by preparing the fish.  ask your fishmonger to clean them for you but to leave them whole, let the fish dry completely before working with it
  2. halve the endives and toss them in the oven at 400F until the tips get brown
  3. prepare a dry rub of crushed red pepper, salt, pepper, clove, cardamon and amarillo pepper
  4. rub this all of over your fish as well as inside the cavity
  5. throw the fish on the same tray as the endives
  6. place a little bit of melted butter on the fish to help the skin get crispy
  7. stuff some parsley in the fish cavity as is
  8. squeeze a lemon on the fish and place the lemons on the tray as well
  9. cook in the oven at 400F for about 25 minutes, until the fish becomes flaky
  10. prepare the salsa by crushing tomatoes and grapes in a bowl
  11. add thinly sliced garlic and vinegar
  12. add chopped parsley
  13. add salt and black pepper to taste
  14. allow the salsa to sit until the fish is ready
  15. plate the fish alongside the salsa and serve with the endives
