BLACKBERRY CHILI CHICKEN SKEWERS (GF)

BLACKBERRY CHILI CHICKEN SKEWERS | makes 6 large skewers |

INGREDIENTS

  • 1 kg chicken leg and thighs (boneless about 5cm pieces)
  • 2 tbsp olive oil
  • 6 cloves of garlic
  • 1 medium onion
  • 1 lemon
  • 6 dried red chilis
  • 1 tsp chili powder
  • 1 tsp crushed red peppers
  • salt
  • 2 tsp cumin powder
  • 2 handfuls blackberries
  • 2 tsp rose water

STEPS

  1. painstakingly skewer your chicken, make sure you pack them well so that they don't dry out (also try to keep it as uniform as possible so that it cooks evenly)
  2. start making your marinade by heating a pot and adding olive oil
  3. toss in some chopped onions, a few whole crushed garlic cloves and cook until they are a deep brown
  4. add some chili powder, whole dried red chilis, crushed red peppers, cumin powder, and lemon juice
  5. add a whole bunch of blackberries and cook covered until they are soft enough to just break apart when you mix it
  6. let everything cool
  7. add a couple teaspoons of rose water
  8. toss everything in a blender and puree it well
  9. smother your chicken skewers with the marinade and toss it in the fridge for at least a few hours
  10. bring it back to room temperature before tossing it on your grill, grill to an internal temperature of 175F
  11. I served this with some fancy grilled tomatoes on the vine
