CABBAGE QUINOA SALAD (V, VG, GF)

CABBAGE QUINOA SALAD | makes 1 large bowl of salad - about 6 servings |

INGREDIENTS

  • 1/2 head shredded cabbage
  • 1/2 bunch chopped cilantro
  • 1/2 chopped large red onion
  • 5 chopped green onions (scallions)
  • 2 chopped green apples
  • 2 chopped english cucumbers
  • salt
  • black pepper
  • 1 tsp cumin powder
  • 2-4 tbsp white vinegar (you can be liberal but be careful)
  • lemon/lime juice
  • 2 tbsp olive oil

STEPS

  1. mix together everything but the quinoa
  2. to make the quinoa: put olive oil in a pan and throw in some cumin powder, salt, and pepper and brown the raw quinoa
  3. add water and cook
  4. fluff the quinoa with a fork
  5. add your quinoa to the mixture 
  6. let everything soak by covering it up and letting it relax, several hours at is best
