CHICKEN MARSALA (GF, D)

CHICKEN MARSALA | makes 2 servings |

INGREDIENTS

  • 4 chicken legs
  • 1 bunch coriander
  • 4 cloves garlic
  • 4-6 tbsp red grape juice (this is the substitution for marsala wine)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • salt
  • black pepper
  • 1 cup chicken stock
  • 1 tsp red chili powder

STEPS

  1. heat oil in a deep pan with whole crushed garlic cloves and red chili powder
  2. fry chicken on both sides until golden brown (start skin side down)
  3. season with salt and pepper
  4. add grape juice and chicken stock
  5. add some butter
  6. cook on both sides on the stove, shoot for an internal temperature of 180F
