CHICKEN SALAD WITH LIME POPPYSEED DRESSING (GF)

CHICKEN SALAD WITH LIME POPPYSEED DRESSING | serves 5 |

INGREDIENTS

  • 3 lbs chicken breast
  • 6 tbsp olive oil
  • 6 tbsp lime juice
  • 1 tbsp black pepper
  • 1 tsp salt
  • 1 tbsp poppyseed 
  • 1 tbsp cumin powder
  • 1 medium granny smith apple
  • 1 heirloom tomato
  • 1/4 head cabbage
  • 1 english cucumber
  • 1 large bunch of fresh basil
  • about 12 radishes
  • 12 grape tomatoes
  • 2 cups seedless grapes
  • 1 handful bean sprouts
  • 2 cups spring mix

STEPS

  1. start by cooking the chicken breasts in boiling water with 1 tsp salt
  2. cook on medium for about 10-15 minutes (check the temperature often or remove a piece and check how soft/firm it is with your finger)
  3. allow the chicken to get to room temperature, and slice about 0.5cm thick 
  4. prepare the dressing by whisking together olive oil, lime juice, salt, black pepper, cumin powder, and poppyseed 
  5. slice the radishes, cucumber, cabbage, apple, heirloom tomato and place to the side
  6. cut the cherry tomatoes and grapes in half
  7. combine or layer all of the solid ingredients
  8. drizzle the dressing on top and serve immediately
