CHICKEN STIR FRY WITH SPROUTS, BROCCOLI, AND SNAP PEAS (GF)

CHICKEN STIR FRY WITH SPROUTS, BROCCOLI, AND SNAP PEAS | makes 4 servings |

INGREDIENTS

  • 4 medium chicken breasts (or you can use thigh meat)
  • 1 handful sprouts
  • 1 crown broccoli
  • 1 handful snap peas
  • 1 handful oyster mushrooms
  • gluten-free soy sauce
  • 4 tbsp worchestershire sauce
  • 1/4 cup pomegranate juice
  • 6 cloves of garlic
  • 2 tbsp olive oil

STEPS

  1. prep your chicken breast by cutting them into even strips
  2. heat olive oil in a pot and then toss in your garlic
  3. when the garlic is a light brown, toss in the chicken and brown it
  4. add soy sauce until the chicken evenly browns
  5. add 4 tbsp worchestershire sauce and 1/4 cup pomegranate juice
  6. once you feel like the chicken is 85% done, toss in all of the vegetables and cook until the chicken is fully cooked - the vegetables should still be crisp
  7. use a slotted spoon and serve this in a bowl
