CHILI TOMATOES (V, VG, GF)

CHILI TOMATOES | makes 2 servings |

INGREDIENTS

  • 2 handfuls colorful tomatoes
  • 1/2 tsp cumin
  • himalayan salt 
  • black pepper
  • 3/4 tsp curry powder
  • 1/4 tsp crushed red chili
  • 1 lime
  • olive oil
  • 3 cloves garlic
  • 2 jalapeños

STEPS

  1. cut the tomatoes in half and arrange them on a baking sheet
  2. intersperse halved jalapeños
  3. toss on garlic, salt, black pepper, crushed red chili, curry powder, lime juice, and a little bit of olive oil
  4. roast in the oven at 400F for about 10 minutes or until the tomato skins get wrinkly
