CHINESE GARLIC CHICKEN WITH SNAP PEAS (GF)

CHINESE GARLIC CHICKEN WITH SNAP PEAS | makes 3 servings |

INGREDIENTS

  • 2 chicken breasts
  • 8 cloves garlic
  • 1 tbsp ginger paste
  • 1 handful snap peas
  • 2 tbsp sesame oil
  • 1 1/2 cups chicken broth
  • 3-4 tbsp gluten-free soy sauce
  • 2 tbsp fish sauce
  • 3 scallions
  • 4 dried chilies 

STEPS

  1. heat the sesame oil in a pan, being careful not to burn it 
  2. add ginger paste, whole crushed garlic and black pepper
  3. once the garlic browns a bit, then add in your thinly sliced chicken breast 
  4. when you see the chicken beginning to turn white, pour in your soy sauce, fish sauce and shortly thereafter, the chicken broth.  make sure you have enough broth so the chicken doesn’t dry out.
  5. remember, your chicken is thinly sliced, so it will cook very fast
  6. toss in your snap peas and sliced scallions 
  7. strain out the goodness (save the liquid to make egg drop soup or something equally as exciting)
  8. top with some dried chilies
