CRANBERRY LAMB CHOPS WITH CUCUMBER SUSHI (GF, D)

CRANBERRY LAMB CHOPS WITH CUCUMBER SUSHI | makes 6-8 lamb chops | 

INGREDIENTS

  • 1 lamb rack
  • 2 habanero peppers
  • 3 cups fresh cranberries
  • 1/4 cup raw sugar
  • 1/2 orange peel
  • 1 english cucumbers
  • 1/4 kg cream cheese
  • 6 garlic cloves
  • 1 tsp red chili powder
  • 1 twig rosemary
  • 1 tsp cumin powder
  • olive oil
  • black pepper
  • salt
  • 2 tbsp butter
  • 1/4 cup orange juice

STEPS

lamb

  1. make a marinade for your lamb rack by first cooking down 2/3 of the cranberries in a pot with a few tablespoons of water
  2. once the cranberries start to pop take it off the heat and add the orange peel
  3. allow the mixture to completely cool and take out the orange peel
  4. split this mixture into two parts, one for the lamb and the other for the sushi
  5. blend the following: 1/2 of the cranberry mixture, 4 tbsp olive oil, rosemary, salt, and black pepper
  6. marinade your lamb with this mixture, ideally overnight
  7. cook your lamb rack in the oven to an internal temperature of 160F, this will likely take 30 minutes at 350F, make sure you leave your lamb covered when its ready
  8. cut the lamb rack into individual lamb chops

sauce

  1. make a sauce by heating butter in a pot, drop in garlic cloves
  2. cook until light brown
  3. add the red chili powder and cumin powder
  4. put a cup of fresh cranberries in the pot
  5. add a roughly chopped habanero pepper 
  6. add some orange juice
  7. salt to taste
  8. add olive oil to the mix 
  9. add water to thin it out
  10. let the mixture cool, and then put it in a blender
  11. once completely blended, put it back in the pot and reduce it until it is a thick sauce

sushi

  1. use a slicer and make very thin slices of the english cucumber (lengthwise)
  2. take the cranberry mixture that you set aside and blend it with 1 habanero pepper
  3. take the cream cheese and whip it up with this mixture you just made
  4. roll 2 slices of cucumber so that it resembles sushi and scoop a tbsp of your cream cheese mixture into the middle
  5. plate the cucumber sushi upside down
  6. when you do your final plating, layer a few ripped up slices of cucumber (or use julienned cucumber) and use it as your base, place a lamb chop on the cucumber and top with some cranberry sauce.  serve the cucumber sushi on the side.
