CUCUMBER AND GOOSEBERRY SHRIMP SALAD (GF)

CUCUMBER AND GOOSEBERRY SHRIMP SALAD | makes 4 bowls of salad |

INGREDIENTS

  • about 30 shrimp (depending on size)
  • 2 large english cucumbers
  • 1 handful cherry tomatoes
  • 2 tbsp dried gooseberries (amla) - available at the indian grocery store
  • dried mango powder (amchur) - available at the indian grocery store
  • black pepper
  • 1/4 cup red grape juice
  • 1 tsp red chili powder
  • 1 lime
  • cilantro for garnish
  • 2 tbsp butter
  • 2 tbsp olive oil

STEPS

  1. chop up your dried gooseberries and soak it in water, these tend to be super salty, so you probably won’t need anymore salt in this dish
  2. peel and devein your shrimp
  3. take a small pan and heat the butter, being careful not to let it burn, add your gooseberries, red chili powder and mango powder to this
  4. once the amla softens up, add 1/4 cup red grape juice
  5. cook it for a bit until it reduces nicely and gets kinda thick, then set it aside
  6. cook your shrimp in olive oil, no other seasoning
  7. let the shrimp cool, then chop them up and mix them with your gooseberry reduction
  8. take a big bowl and add julienned english cucumbers, some cherry tomatoes cut into half
  9. add your shrimps to the mix
  10. squeeze in some fresh lime juice and mix it up
  11. sprinkle some freshly ground black pepper
  12. garnish with cilantro
