DATE AND ASPARAGUS CHICKEN | makes 4 servings |


  • 1 kg chicken thigh meat
  • 2 lemons
  • himalayan salt
  • black better
  • 2 tbsp butter
  • 1 handful dates
  • 1 head garlic
  • 2 tbsp olive oil
  • 1 tsp crushed red peppers
  • 1.5 tsp red chili powder
  • 1 tbsp coriander powder
  • 1 large bunch of asparagus
  • 1/2 tsp chia seeds


  1. prep your chicken thighs by cutting them into even pieces 
  2. squeeze a full lemon's worth of juice onto the chicken and top with salt and black pepper - let this sit while you prep the remainder of the meal
  3. slice the dates lengthwise and coarsely cut up one head of garlic
  4. heat 2 tbsp butter in a saute pan with a lid
  5. add the dates and garlic
  6. once the dates soften and the garlic browns, add olive oil followed by crushed red pepper, red chili powder, and coriander powder
  7. take note of the color, and cook covered until the dates further soften and the color is a deep uniform brown
  8. add the chicken to the mixture
  9. add about 1/2 cup water and mix aggressively
  10. cook covered on medium heat until the chicken is 60-70% cooked
  11. add the asparagus to the mixture
  12. taste the sauce, here is your opportunity to add more salt if needed
  13. add the juice of one lemon to the mixture
  14. remove the pan from heat once the chicken is 90% cooked, it will continue to cook by the time it is ready to eat
  15. sprinkle with some chia seeds for texture and for garnish
