EGGS BAKED IN AVOCADOS (GF, D)

EGGS BAKED IN AVOCADOS | makes 2 servings | 

INGREDIENTS

  • 1 avocado
  • 2 eggs (be nice to chicks and use humane eggs)
  • feta cheese
  • salt
  • pepper

STEPS

  1. cut your avocado in half and then take a thin slice off the bottom so that the halves lay flat - make sure you leave the skin on
  2. crush some salt in the seed-hole (make the hole bigger with a spoon if you need to)
  3. toss a little feta cheese in the seed-hole
  4. crack an egg in there
  5. salt and pepper your egg
  6. cover with more feta cheese
  7. bake at 400F for about 15 minutes (until the egg white solidifies)
  8. peel off the skin before serving
