FENNEL SAGE CHICKEN | makes 1 whole chicken |


  • 1 whole chicken (keep the skin on)
  • 1 lime
  • salt
  • black pepper
  • 2 twigs of sage
  • 1 twig of thyme
  • 1 fennel bulb
  • 2 tbsp olive oil
  • 2 tbsp butter


  1. make a mixture of olive oil, lime juice, salt and black pepper
  2. rub it all over your butterflied whole chicken, marinate if you care to and have the time
  3. use a hot cast iron grill pan and grill both sides until you get an appetizing color
  4. toss sliced fennel, sage, and thyme all around your chicken 
  5. cook covered in the oven and baste often - this should take about 15-20 min at 375F or an internal temp of 180F
  6. uncover and rub some butter on the skin and cook it a bit more until the skin is crispy
