FENNEL TOMATO PLUM SHRIMP SALAD (GF)

FENNEL TOMATO PLUM SHRIMP SALAD | serves 3 |

INGREDIENTS

  • about 15 large shrimp
  • 1 cup of seedless grapes
  • 1 medium fennel 
  • 5 cherry tomatoes
  • 2 large heirloom tomatoes
  • 1/2 handful cilantro
  • 2 red plums
  • 4 tbsp olive oil
  • 4 tsp lime juice
  • 1 tsp cumin powder
  • 1 tsp clove powder
  • 1 tbsp freshly ground black pepper
  • 1 tsp salt

STEPS

  1. if your shrimp are already cooked, then just place them in warm water to get them to room temperature, if they are raw, then boil them for about 3 minutes and allow them to cool
  2. place the shrimp on kitchen towels to let them dry
  3. slice the fennel, heirloom tomatoes, and plums
  4. cut the grapes, cherry tomatoes in half
  5. toss all of the solid ingredients together in a bowl including the shrimp
  6. prepare the dressing by whisking olive oil, lime juice, cumin, clove, black pepper, and salt in a bowl
  7. drizzle the dressing onto the salad and serve fresh
