umami (うま味), I'm told, translates to "pleasant savory taste". In fact, it is often described as the "5th taste" because it somehow doesn't fall under salty, sweet, bitter, or sour. This doesn't make a whole lot of sense to me because spicy doesn't seem to fit under any of those categories either, but I'll leave that to you to delve into and solve. this is a dish that features a tomato and garlic base complemented with umami and then all brought together with some crème fraîche.
