sometimes the best kind of recipes are the ones that you don't have to do any cooking.  here, all you have to do is assemble and enjoy.  i started with gluten-free bread from trader joes and used sheep's milk feta, also from trader joes with fresh watermelon and mint from my "garden".  i don't have anything else to say, because it really is that easy.  there isn't a ton of protein in this dish, so serve it as an appetizer to a meat dish for completeness sake.

i don't eat much bread, or other processed carbohydrates, except on occasion.  when i do, i get the gluten free varieties - here, i use gluten free bread from trader joes.  as far as the feta goes, you can find both cow's milk and sheep's milk feta - i prefer sheep's milk, but you have options.

i don't have a toaster, so i just toast my bread in the oven on a cast iron grill pan with a little bit of butter.

start with the watermelon...

then add the mint...

and then the feta, then top it off with some crushed red peppers
