LAMB RACK | makes 2 lamb racks |


  • 2 lamb racks
  • kosher salt
  • black pepper
  • olive oil
  • 4 tbsp butter
  • 6 cloves of garlic
  • 6-8 leaves of mint
  • 1 twig of rosemary


  1. dry off your lamb racks, and if you care to, marinate with salt, freshly ground black pepper, and olive oil 
  2. if you don’t want to marinate - just sear your lamb racks on a grill pan and season with salt and black pepper and set aside
  3. make a mixture of olive oil, minced garlic, mint, rosemary, and salt
  4. using a brush, paint the lamb racks with your mixture
  5. toss some whole crushed garlic in the pan
  6. place some thin slices of butter on the lamb
  7. cover, and cook in the oven until the meat temp is 165 (plus or minus depending on how you like it) - this doesn’t take very long - around 15-20 min at 400F
  8. take it out and let it rest for a bit prior to serving
