LAVENDER MASCARPONE MOUSSE (VG, GF, D)

LAVENDER MASCARPONE MOUSSE | makes 4 servings |

INGREDIENTS

  • 8 oz mascarpone cheese
  • 8 oz heavy cream
  • cane sugar
  • 1 tsp lavender essence 
  • gluten-free cookies

STEPS

  1. take your heavy cream and whisk it until you get soft peaks to make whipped cream
  2. take the mascarpone cheese out in a bowl and soften it up using a spatula
  3. add sugar to taste (i don't like things sweet, so i only added 4 tbsp)
  4. add lavender essence (you want a very subtle flavor here)
  5. fold in the whipped cream gently
  6. crumble a gluten-free cookie in the bottom of a bowl and place a scoop of the mousse on top
  7. top the mousse with a little more cookie crumble
  8. refrigerate until ready to serve
