LEMON AND SAGE CHICKEN (GF, D)

LEMON AND SAGE CHICKEN | makes 1 whole chicken | 

INGREDIENTS

  • 1 whole chicken
  • 2 twigs sage
  • 4 medium potatoes
  • 1 large onion
  • 1 tsp red chili powder
  • black pepper
  • 1 lemon
  • 1 lime
  • 1/2 cup yogurt
  • 6 cloves garlic
  • kosher salt
  • 4 tbsp olive oil
  • 1 belgian endive

STEPS

  1. make a marinade consisting of: olive oil, yogurt, red chili powder, twigs of sage, lots of lemon juice, salt, and lots of black pepper
  2. rub your chicken with the marinade (or if you're awesome - you can marinate in a bag and keep it in the fridge overnight) - use a flavor injector if you have one
  3. put some potatoes, whole garlic, and onions in the bottom of a pan and place the chicken on top
  4. toss in a quartered endive in the pan for a little extra flavor
  5. squeeze some fresh lime juice on top
  6. roast away for about 1 hour at 400F to an internal temp of 180F
