LEMON CUMIN CREAM CHICKEN (GF, D)

LEMON CUMIN CREAM CHICKEN | makes 2 servings |

INGREDIENTS

  • 4 chicken legs (whole leg)
  • 8 cloves garlic
  • 1 tsp cumin powder
  • 2 tbsp lemon juice
  • 1/2 cup heavy cream
  • 2 tbsp garam masala
  • 2 tsp coriander powder
  • salt
  • 1 tbsp olive oil
  • 1 tbsp butter

steps:

  1. make a mixture of heavy cream, lemon juice, cumin, garam masala, salt, and coriander powder
  2. fry crushed garlic in butter and olive oil
  3. fry chicken until both sides are golden brown (start skin side down)
  4. place chicken on baking dish and cover in sauce from step 1
  5. bake in oven until you get an internal temperature of about 180F, this will likely take 30-40 min at 375F
  6. serve on a bed of arugula
