MAHI MAHI WITH BLUEBERRY TOMATO SAUCE (GF)

MAHI MAHI WITH BLUEBERRY TOMATO SAUCE | serves 1 |

INGREDIENTS

  • mahi mahi - 8oz
  • basil - 10 leaves
  • chili peppers - 1/2 pepper
  • garlic - 2 cloves
  • tomato - 1 (50g)
  • salt 
  • black pepper
  • blueberries - 1/4cup (20g)
  • butter - 1/2 tbsp
  • olive oil - 1/2 tsp

STEPS

  1. place the following ingredients in the blender: tomatoes, garlic, chili pepper, blueberries, olive oil and blend until smooth
  2. transfer to a pan and reduce on the stove, mixing often
  3. add salt and black pepper to taste
  4. add about half of the basil to this mixture
  5. cook down until it reduces to a thick paste
  6. in the meantime, melt the butter on a pan
  7. cook the mahi mahi skin side down first and rotating so that it cooks on all sides
  8. plate with the sauce on the bottom and the mahi mahi on top, using a brush, coat the fish with more of the sauce (save any remaining sauce for use as a marinade later on)
