MANGO THYME CHICKEN | makes 1 whole chicken | 


  • 1 whole chicken
  • 4 potatoes
  • 1 large onion
  • 2 twigs thyme
  • 3 tbsp amchur (dried mango) powder
  • 1 lemon
  • black pepper
  • 1/2 cup yogurt
  • 6 cloves garlic
  • kosher salt
  • 4 tbsp olive oil
  • 1 belgian endive


  1. make a marinade consisting of: olive oil, yogurt, amchur powder, lemon juice, tons of freshly ground black pepper and twigs of thyme
  2. rub your chicken with the marinade (or if you're awesome - you can marinate in a bag and keep it in the fridge overnight) - use a flavor injector if you have one
  3. put some potatoes, whole garlic, and onions in the bottom of a pan and place the chicken on top
  4. quarter an endive and toss them in the pan
  5. squeeze some fresh lime juice on top
  6. roast away for about 1 hour at 400F to an internal temp of 180F
