• 2 cage-free, humanely raised eggs
  • 6 handfuls of spinach
  • 1 small onion
  • 4 cloves garlic
  • 1/4 tsp whole cumin seeds
  • 1/4 tsp fennel seeds
  • salt to taste
  • black pepper
  • 1/2 tsp crushed red peppers
  • 2 tbsp olive oil
  • chia seeds for garnish 


  1. take a pan and heat the olive oil
  2. toss on your chopped onion and chopped garlic and cook until light brown
  3. add your whole cumin, fennel seeds, black pepper, and crushed red peppers
  4. add a whole bunch of chopped spinach to your mix, it will significantly cook down, so use a lot
  5. poach your eggs - here’s how: 
  6. boil water in a pot, then bring it to a simmer
  7. add a little bit (think along the order 1/2 tsp) of vinegar (add too much and your eggs come out stringy and coagulated, add too little and they won't coalesce well)
  8. use a whisk and make a tornado in the water
  9. drop in your egg (which you previously cracked into a small bowl)
  10. take out the egg and put it in ice water, this generally takes 3-5 minutes, but you can check by lifting the eggs to the surface and touching the yolks 
  11. when you’re ready to plate, put your eggs back in hot water to warm them up
  12. plate the spinach first, then place a poached egg on top
  13. crack some black pepper on top of your eggs
  14. finish off with some tasty olive oil and chia seeds
