OLIVE AND CAPER CREME CHICKEN | makes 8 pieces chicken |


  • 8 pieces chicken legs and thighs 
  • 1/4 cup black olives (take your pick of what kind you like)
  • 2 tbsp capers
  • 4 green chilis
  • 4 tbsp crème fraîche
  • sea salt
  • black pepper 
  • 1 tbsp soy sauce
  • 4 cloves garlic (or garlic paste)
  • olive oil


  1. clean and dry your chicken legs
  2. rub your chickens with a little bit of salt and let them sit for a bit
  3. grab a blender and toss in the following: olives, capers, a handful of green chilis, black pepper, soy sauce, and a few cloves of garlic
  4. blend it to kingdom come and then add the crème fraîche and whisk
  5. slowly add olive oil while you're whisking until your mixture gets thin enough to pour
  6. salt to taste, remember this is a marinade, it should be ocean salty
  7. set a little bit of the marinade aside
  8. rub the marinade all over the chicken legs and let sit for as long as you can 
  9. grill until you hit an internal temperature of around 175F
  10. toss the marinade you kept aside on a small skillet and add some pomegranate juice
  11. reduce the mixture, then use it as an amazing sauce
