OLIVE CORIANDER CHICKEN | makes 30 servings |


  • 20 lbs boneless chicken leg and thighs cut into small pieces 
  • 3 cups marinated black olives (deseeded)
  • 10 medium green chillies 
  • 1 bunch coriander
  • 1 cup olive oil
  • 4 tsp garlic paste
  • 8 tbsp butter
  • 10 tbsp kabsa spices (black pepper, turmeric, coriander, fennel seed, allspice, cardamon, nutmeg, white pepper)
  • 2 tbsp aleppo pepper 
  • 6 tbsp crushed red chillies
  • 2 pints heavy cream


  1. carefully deseed your olives and place them in a blender with the remainder of the ingredients with the exception of the heavy cream and blend until smooth
  2. add the heavy cream and blend for about 30 seconds
  3. pour the marinade over the chicken and skewer them
  4. refrigerate overnight 
  5. cook the chicken skewers on a grill at medium heat until the chicken temperature is about 180F
  6. I served this as part of gluten-free burritos, but you can be creative here
