POACHED EGGS WITH TOMATOES (GF)

POACHED EGGS WITH TOMATOES | serves 1 |

INGREDIENTS

  • medium cage free eggs - 3
  • butter - 1 tbsp (14g)
  • garlic - 4 cloves
  • mixed tomatoes - about 3 depending on the size (420g)
  • chili peppers - 2
  • salt 
  • kabsa spice - 1 tsbp (or mixed spices of your choosing)

STEPS

  1. roughly cut the tomatoes (if you are using cherry or grape tomatoes - no need to cut these) and toss them in a oven safe pan along with the butter, garlic, and chili peppers
  2. sprinkle your mixed spices on top - I use kabsa spice because it is a great blend of earthy flavors that go well with the tomato, but other good choices here would be salt, black pepper, and cumin.
  3. place the pan in the oven and roast at 450F for about 10 minutes
  4. while the tomatoes are cooking, poach 3 eggs
  5. remove the eggs and keep them in cold water
  6. remove the pan from the oven and smash the tomatoes with a heavy spoon
  7. cook on the stove to get rid of some of the excess moisture
  8. salt to taste
  9. plate with the tomato mixture on the bottom and poached eggs on top
