• meals should be healthy, desserts should be tasty
  • vegetables and meat should be the main components in any meal
  • food should be gluten-free (with almost no exceptions)
  • food should grain-free (for the most part)
  • flavors should be simple (this doesn't mean boring)
  • food that doesn't look amazing doesn't taste amazing
  • be kind to animals (use humanely treated animals and eggs - always)
  • cooking should be a passionate experience
  • cook for others, often
  • cook with love
  • live in the present, and let this philosophy carry over into everything you do


i am often asked what tools/gadgets i use in the kitchen - it's not a whole lot, but here they are.  hopefully this will show you that you don't need much to cook exceptional meals.  

  • i own 5 knifes: a 3 1/2" paring knife, a 6" serrated utility knife, an 8" chef's knife, and absurdly long sashimi knife and a low cost 6" utility knife (which I use for just quick jobs)
  • meat thermometer
  • hot water kettle (with several different temperature options)
  • blender
  • masticating juicer
  • french press
  • kitchen torch
  • japanese mandoline slicer
