PROTEIN PANCAKES BY BEAUTY AND THE FEAST | makes 8 small pancakes |

INGREDIENTS

  • steel cut oatmeal (40g - about 1/4 cup uncooked)
  • 4% cottage cheese (1/4 cup)
  • medium eggs (4)
  • unsweetened almond milk (2 tbsp)
  • oats and whey protein powder (2 scoops)
  • ground vanilla bean (1/4 tsp)
  • butter (to oil pan)

STEPS

  1. make the steel cut oats according to the packaging - for mine, I boiled them in 1 cup water for about 10 minutes and then let them sit for another 10 minutes
  2. put all of your ingredients into a blender
  3. blend until smooth and airy, if you under-blend you will end up with a gritty texture and if you over-blend then you will end up cooking your eggs 
  4. lightly butter your pan
  5. cook for about 3 minutes on low heat then flip and cook for another 2 minutes
  6. serve with berries, nutella, or anything else you can think of
