SALMON WITH FRESH TOMATOES | makes 2 servings |


  • fresh wild caught salmon - 20 oz
  • garlic - 6 cloves
  • basil - 20 leaves
  • cilantro - 1/2 handful
  • cherry tomatoes - 450g
  • butter - 1 tbsp
  • aleppo pepper - 1 tsp 
  • ghost pepper sea salt - 1 tsp
  • honey - 1/2 tbsp 
  • salt 
  • black pepper


  1. start by slicing your garlic into thin slices - it is important that they are thin because the garlic is going to stay raw
  2. take all of your tomatoes and mix them with the garlic and chopped cilantro in a large bowl
  3. using a heavy spoon (or some other device), crush the tomatoes to release the juice, really go at this so that the flavors mesh
  4. add in basil (cut through only once)
  5. salt and black pepper to taste, and let this sit
  6. on a hot pan, add butter 
  7. before the butter begins to smoke, gently place the salmon skin side down
  8. flip once when the salmon cooks about 1/3 to 1/2 way up
  9. be very careful not to overcook the salmon
  10. remove and place on a cutting board
  11. using a brush, rub your honey on the salmon
  12. sprinkle the aleppo pepper and ghost pepper sea salt on top and gently pat down
  13. place the salmon on top of the tomato mixture and serve promptly
