SALMON WITH QUINOA AND BRUSSELS SPROUTS (GF)

SALMON WITH QUINOA AND BRUSSELS SPROUTS | makes 4 servings |

INGREDIENTS

  • 2 fillets of salmon
  • 1 lime
  • 2 tbsp miso paste or soup mix (approximately)
  • 1/2 handful shiitake mushrooms
  • 1 tbsp butter
  • 12 cloves garlic
  • 3 tbsp olive oil
  • 15 brussels sprouts
  • 1 cup quinoa
  • 1 tsp cumin powder
  • himalyan salt
  • black pepper

STEPS

poached salmon

  1. heat olive oil in a pan and add one third of the garlic and cook until golden brown
  2. add a little butter
  3. add about 2-3 cups water - enough to cover the pan so that your salmon will be submerged
  4. add miso paste or soup mix - the amount is going to depend on how much water you use, taste it as you are adding the miso - it should be salty
  5. add your shiitake mushrooms
  6. poach the salmon by lowering the heat so that the mixture is at a simmer and then gently placing the fillets in the simmering mixture and cooking for about 3-4 minutes, be very careful not to overcook this
  7. let it cool down and break it apart gently
  8. save the rest of the liquid to have as soup on the side

quinoa

  1. heat olive oil in a pan and a third of the garlic and cook until golden brown
  2. add cumin powder
  3. add raw quinoa and cook for a bit until they brown and start to pop
  4. add water (twice the quantity as the quinoa)
  5. add salt to taste
  6. simmer and cover until it soaks up the water
  7. whip up the mixture with a fork while it is cooling

brussel sprouts

  1. heat olive oil in a pan and add the remaining garlic and cook until golden brown
  2. add black pepper
  3. add sliced or shredded brussel sprouts
  4. squeeze some lime juice 
  5. add himalyan salt

excitement 

  1. take a small mason jar and put the salmon in the bottom, then quinoa, then brussel sprouts and add some of the salmon miso soup you just made
  2. attempt to do a better job than myself to invert the jar onto a plate
