SHRIMP AND SPICY FIG SALAD (GF)

SHRIMP AND SPICY FIG SALAD | makes 2 servings | 

INGREDIENTS

  • avocado (120 g - 1)
  • red cabbage (55g - 1 cup)
  • red raddish (100g - about 8)
  • yellow tomato (175g - 1 large)
  • green pluot (115 g - 1 medium)
  • mild green chili peppers (40g - about 3-4)
  • shrimp (155g - about 16)
  • black mission figs (60g - about 4)
  • pomegranate vinaigrette dressing (30 mL - 4 tbsp)

STEPS

  1. cook the shrimp (if you bought cooked shrimp, then just bring them to room temperature by placing them in warm water) in boiling water for about 3-4 minutes
  2. cut up/slice all of your ingredients
  3. add a little bit of salad dressing and serve
