SOYBEAN SPAGHETTI AND MEATBALLS (GF)

SOYBEAN SPAGHETTI AND MEATBALLS | makes 3-4 servings |

INGREDIENTS

  • 1 kg ground chicken
  • 1 large red onion
  • 8 cloves garlic
  • 2 tsp cumin powder
  • 2 tsp garam masala
  • 1 dried habanero pepper
  • himalayan salt
  • black pepper
  • 1 cage-free egg
  • 3 tbsp pecorino romano cheese
  • 1 handful cherry tomatoes
  • 200g bean pasta (this is the kind I used)
  • 5 tbsp olive oil 

STEPS

chicken meatballs 

  1. take a bowl and toss in half of your finely chopped red onion, half of the thinly sliced garlic, pecorino romano cheese, salt, black pepper, half of your chopped dried habanero pepper, half of the cumin powder, half of the garam masala, egg, and ground chicken
  2. mix it all up with your hands and shape them into meatballs
  3. heat olive oil in a pot
  4. fry up your meatballs until they are almost fully cooked and then take them off the pan

sauce

  1. take a whole bunch of cherry tomatoes and toss them in a blender
  2. take a pot and heat some olive oil
  3. toss in the rest of the garlic and onions 
  4. once they brown, toss in the rest of the cumin powder, garam masala and habanero pepper
  5. pour in all of the blended tomatoes
  6. salt to taste
  7. toss in your meatballs and let it sit for a bit

spaghetti

  1. this is super simple, just salt some boiling water and toss in your bean pasta and cook it as if it was regular pasta
  2. serve your meatballs over the spaghetti and with some exciting garlic lemon kale
