STEAK WITH ROASTED VEGETABLES AND A CILANTRO SPROUT SAUCE (GF)

STEAK WITH ROASTED VEGETABLES AND A CILANTRO SPROUT SAUCE | makes 4 servings |

INGREDIENTS

  • 1 kg top round steak 
  • himalayan salt
  • black pepper
  • 1.5 tbsp butter
  • 1/2 large onion
  • 4 cloves of garlic
  • 1 tbsp cumin powder
  • 1 bunch cilantro
  • 5 shishito peppers
  • 1 fistful arugula sprouts
  • 8 medium carrots
  • 1 head cauliflower 

STEPS

steak

  1. lay out your steak and pat it dry
  2. rub the steak down with salt and black pepper and let it sit

roasted vegetables

  1. in a large pot, boil water
  2. place your carrots in the pot with the stems sticking out
  3. boil for about 10 minutes then take out and place on a baking sheet
  4. drizzle with olive oil and top with salt and black pepper
  5. in a separate baking sheet place a quartered head of cauliflower
  6. drizzle with olive oil and top with salt and black pepper
  7. roast at 400F for about 20-25 min (about 15 min in, turn over the carrots and break up the cauliflower into smaller pieces

sauce

  1. heat butter in a pan and add sliced onions and whole garlic cloves
  2. stir frequently and cook until golden brown
  3. add quartered shishito peppers
  4. add cumin powder 
  5. once the peppers soften toss in your cilantro and arugula sprouts
  6. as soon as the cilantro wilts, turn off the heat and pour the mixture into a blender with about 1/2 cup water
  7. blend well and then set aside

grilling the steak

  1. heat a cast iron pan and add a little bit of butter
  2. grill each side for about 2-3 minutes depending on how thick the slices are and how well you like your meat done.  i prefer medium.

plating

  1. plate the roasted cauliflower first
  2. lay some carrots next to the cauliflower 
  3. top with thin slices of steak 
  4. finish with 2-3 tbsp of the cilantro sprout sauce
