STUFFED LEMON CUMIN CHICKEN | makes 1 whole chicken |


  • 1 whole chicken
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1.5 cups rice
  • 2 lemons
  • 3/4 tsp cumin powder
  • 6 cloves garlic
  • 1 large onion
  • 1 handful baby potaotes
  • black pepper
  • himalayan salt
  • 3/4 tsp garam masala


  1. make your marinade with the heavy cream, olive oil, cumin powder, black pepper, garam masala, salt, and thinly sliced garlic
  2. rub your chicken up and down with the mix, use a flavor injector if you have one
  3. heat some olive oil in a pot
  4. add some whole crushed garlic and chopped onions to the pot
  5. once they brown, add boiling water (2.5 times the amount of rice)
  6. add your rice, and cook it about 50% of the way and then drain the water
  7. stuff your chicken with the half-cooked rice and your potatoes
  8. cook it covered in the oven until it is almost done - about 30-40 min at 400F, or to an internal temp of 180F
  9. slice some butter and put it on the skin and finish cooking it uncovered, this will make it nice and crispy, and will give it a nice color
  10. take the rice out and serve separately
