SWORDFISH WITH KALE DRESSING | makes 2 swordfish steaks |


  • 2 swordfish steaks
  • 1 tbsp olive oil
  • 1 small onion
  • 4 cloves garlic
  • 1/2 tsp coriander powder
  • 1/4 tsp turmeric powder
  • salt
  • 1 fresno pepper
  • 1 lemon
  • 6 inches lemongrass
  • 1/2 bunch cilantro
  • 3 twigs mint (remove the leaves)
  • 6-7 mint leaves
  • 2 fistfuls kale
  • sumac for garnish
  • 4 tbsp creme fraiche 


  1. take a pot and heat some olive oil in it
  2. toss in chopped onion and garlic (don't worry about being overly meticulous here, they have to be blended anyway), and and cook until brown
  3. add some coriander powder, and just a tiny bit of turmeric powder
  4. add a halved fresno pepper
  5. add some freshly squeezed lemon juice
  6. add some water and salt to the point that it is pretty salty
  7. toss in a stick of lemon grass and mint twigs (not the leaves) 
  8. boil for a few minutes (until the pepper is nice and soft)
  9. let the mixture cool and then toss it in a blender (make sure you take out the lemongrass and mint twigs) with kale, a good amount of cilantro, and a little bit of mint
  10. set your fantastic dressing aside
  11. using a nice hot pan, add some olive oil and gently lay your thoroughly dried swordfish steaks down
  12. cook it a few minutes until it cooks up about 1/3 of the height
  13. gently flip
  14. cook it the rest of the way, but be careful not to overcook
  15. I served this on top of a black bean pasta, drizzled with the kale dressing and with a dollop of creme fraiche on the side sprinkled with some sumac
