INGREDIENTS

  • gluten free whole grain bread - 2 slices
  • watermelon - 50g
  • unsalted butter - 1/2 tbsp
  • feta cheese in brine - 2oz
  • fresh mint - 8 leaves
  • crushed red pepper - sprinkle

STEPS

  1. this is more assembly than actual cooking
  2. toast the bread with butter (I don't have a toaster, so I do this in the oven on a cast iron pan)
  3. layer the watermelon, followed by the mint, then the feta, on the bread
  4. sprinkle some crushed red pepper on top
