ZA'ATAR SPINACH SCRAMBLED EGGS (GF, D)

ZA'ATAR SPINACH SCRAMBLED EGGS | makes 2 servings |

INGREDIENTS

  • 8 cage-free, humane eggs
  • 2 tbsp za'atar
  • black pepper 
  • himalayan salt
  • 2 handfuls spinach
  • 2 tbsp butter
  • 2 tbsp creme fraisch 
  • extra sharp australian cheddar cheese
  • smoked salmon
  • 1 avocado

STEPS

  1. take a cold pan and toss on your butter and rub the pan
  2. add your eggs to a still cold pan
  3. turn on the hob to medium and constantly fold with a spatula, taking it off of the heat every minute or so for a few seconds
  4. when about 50% cooked, sprinkle with za'atar
  5. when the eggs are 85% cooked, toss in the spinach and continue to fold until the eggs are almost done (they will continue to cook once you take it off of the stove)
  6. season with black pepper and a little salt (the cheese and salmon will be salty)
  7. top with extra sharp cheddar
  8. serve with some smoked salmon, avocado, and a freshly-made green juice
